The word “organic” instantly adds a three hundred percent markup to any vegetable, transforming a regular, dirt-covered potato into a rare, artisanal subterranean tuber. People willingly pay exorbitant amounts for kale, a leaf that tastes like lawn clippings but promises spiritual enlightenment and eternal youth. The packaging is always rustic brown cardboard, complete with a touching story about a happy farmer named Bob who personally massaged each tomato. We purchase gluten-free, sugar-free, taste-free water just to feel like we are saving the planet. In reality, the only thing truly being cleansed during an organic shopping spree is your bank account, leaving you broke but exceptionally well-hydrated.
